Picnic Rice "Bowl"

The great thing about making a bulk batch of peanut sauce is the speed at which you can create a fabulous meal at the drop of a hat with it.

When Eric suggested we have a picnic on the beach, we were good to go in the time it took to make brown rice in a pressure cooker.

Here’s what I did.

I sliced/grated:

  • Carrots

  • Cabbage

  • Cucumber

Those went on one side of our containers on top of some salad greens.

When the rice was done cooking, I added some glugs and drizzles of:

  • Sesame oil

  • Rice vinegar

  • Black sesame seeds

And then I went back to work! (It was lunchtime.)

When I was done with meetings for the day, and we were ready to walk to the beach, I simply added:

  • Leftover tofu

  • Lots of peanut sauce

  • Roasted peanuts

  • Sesame seeds

  • (would have been great with some scallions, too)

We threw them in a backpack and headed out!

I think this is the most delicious and wholesome meal I’ve ever packed up for a picnic.

And the sunset didn’t disappoint, either:
