Caprese's Funky Cousin

Inspired by the extreme abundance of Thai Basil growing in my garden right now, I brought the classic Greek chopped salad and the Italian caprese salad together, and thought, heck, let’s add Thai Basil!

This is simplicity in action. There is nothing to do other than chop and crumble, but with the right amount of salt and pepper, this salad comes together as a side worthy for entertaining.

The Prep

Chop up:

  • Several tomatoes

  • Cucumbers

Putting it Together

Plating

Gather the tomatoes and cucumbers on the plate (either a big serving platter or individual plates). Immediately add flaky sea salt and black pepper.

Add:

  • Generous crumblings of feta

  • Whole pitted kalamata olives

  • Fresh leaves of Thai Basil

  • More fresh flaky salt

  • A sprinkle of sumac, if you happen to have some

Optionally, you could drizzle some fresh olive oil or some basil oil here, but I think this is divine without any dressings. I think it’d be great with some other surprises too — cantaloupe, perhaps? The garden sings.
